Ingredients:

· 8-10 rice paper wrappers
· 1 cup cooked rice noodles
· 1 cup julienned carrots
· 1 cup julienned cucumbers
· 1 cup julienned bell peppers (assorted colors)
· 1 cup thinly sliced purple cabbage
· 1/2 cup fresh cilantro leaves
· 1/4 cup chopped roasted peanuts or cashews

Instructions:
1. Prepare the Vegetables:
· Julienne the carrot, bell peppers, and cucumber.
· Thinly slice the red cabbage.
· Chop the nuts or seeds
· Rinse the cilantro leaves, pat them dry, and set aside.
2. Assemble the Rice Paper Rolls:
· Fill a shallow dish with warm water.
· Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
· Place the softened wrapper on a clean, flat surface.
· In the center of the wrapper, layer a small portion of rice noodles, carrots, cucumbers, bell peppers, ad purple cabbage in a line across the center of the rice paper, leaving about an inch of space on each side.
· Top with a sprinkle of fresh cilantro and nuts

3. Roll the Rice Paper:
· Fold the bottom edge of the wrapper over the filling, tucking it in tightly.

· Arrange the completed rolls on a serving platter.
